Chef Jian Liao hails from Luzhou, Sichuan, and brings with him not only his culinary expertise but also a deep appreciation for the flavours of his hometown. He has a particular liking for simple yet flavourful dishes like chicken with green peppers and steamed pork, which speak to the heart of Sichuan cuisine.
When it comes to cooking, Chef Jian Liao loves to cook “Luzhou” Baked Eggs, often regarded as the most perfect omelette. His skill in crafting this dish demonstrates his attention to detail and his commitment to elevating everyday ingredients into something extraordinary.
One of Chef Jian Liao’s most cherished culinary memories is from his childhood in Luzhou. He fondly recalls watching the elders in his community skillfully wrap glutinous rice in bamboo leaves to create Huangba, a delicious local snack. This memory not only connects him to his roots but also inspires his approach to cooking – blending tradition with innovation.
