Perhaps there is no dish more iconic to China Sichuan’s province than Ma Po Tofu, which was, according to legend, created by an old lady scarred by smallpox in the 19th century. “Po” means old lady, and “Ma” means pock-marked, but also means “numb and tingling,” one of the  benchmark spicy heats in Sichuan cuisine. Traditionally Ma Po Tofu is made with beef and tofu, many people use pork instead of beef, and of course you can make it vegetarian, or if you are feeling fancy, add lobster.
