This is one of China Sichuan’s most popular sauces.

According to food historian Fuschia Dunlop, the balance of the sauce is also known as “lychee” flavor, because the components together magically evoke the perfume of that fruit.

Traditionally it’s paired with chicken but you can put it on pork, aubergine, tofu, anything — be creative!
